    From the celebrated Ratnagiri Estate in India's Western Ghats, this Catuai varietal is grown at 1200-1500 metres. The coffee undergoes a meticulous Anaerobic Natural process, where cherries are fermented in an oxygen-free environment to develop stunningly complex and unique flavours.

    A light Filter Roast is expertly applied to this coffee. This delicate touch preserves the complex aromatics of floral perfume and nutmeg, while allowing the nuanced fruit flavours of papaya, dried date, green grape, and lemongrass to shine with clarity.

From Ratnagiri Estate’s cutting-edge experimental fermentation program, this micro-lot pushes the frontier of Indian specialty coffee. Each cherry is transformed through a meticulous process that creates a cup alive with red berry brightness, the zing of orange zest, and a subtle umami burst layered with refined acidity. Every sip of Aether is a reminder that coffee can transcend the ordinary - not just a drink, but an exploration of flavour, science, and artistry.

      Espresso: Pulls a dynamic and zesty shot. The red berry notes are prominent, leading into a surprising, savory finish.
      Pour-Over (V60/Chemex): The ideal method to appreciate its layered complexity. The orange zest and layered acidity are cleanest with this method.
      AeroPress: Creates a full-bodied cup that accentuates the umami character. A fantastic way to explore its savory side.

      Questions About Aether

      The whole coffee cherries are sealed in an oxygen-free tank to ferment before being dried. This "anaerobic" environment creates unique acids and esters, resulting in exceptionally complex and fruity flavours.

      Catuai is a compact and high-yielding Arabica plant variety known for its bright acidity and clean sweetness, making it an excellent canvas for experimental processing.

      Umami is the fifth basic taste, often described as savory, brothy, or meaty. In this coffee, it presents as a pleasant, deep savory character that balances the fruit-forward notes.

      This is an experimental micro-lot with very limited availability. We highly recommend purchasing it soon as we expect it to sell out quickly.
