This uniquely Indian method is a legacy of the age of sail, when coffee beans transported from India to Europe would transform in the humid holds of wooden ships. Today, we replicate this by placing high-quality green beans in open-sided warehouses along the Malabar coast during the monsoon season. For 12 to 16 weeks, the beans absorb moisture from the sea-laden winds, swelling in size, turning a pale gold, and developing their signature flavour.

Roasting a monsooned bean is a unique challenge. Our goal is to enhance its incredible body and deep, earthy notes without introducing any bitterness. We apply a careful medium-dark roast that caramelizes the sugars to bring out the baker's chocolate character, perfectly complementing the bean's inherent spiciness. This creates a cup that is heavy, powerful, and incredibly smooth.
