      At Coffee.Plus, we chose Compass to symbolise direction and discovery — a coffee that points you towards something extraordinary. This El Salvador Geisha is an elegant journey in itself, with delicate notes of wild strawberry, lilac, and a champagne-like acidity. Its natural process preserves a vibrant, tropical sweetness, while a light roast keeps the cup bright, clean, and deeply refined. Compass is more than a coffee; it’s a guide to what’s possible in flavour, balance, and sophistication.

      Brew with Care, Unlock the Compass

      Gentle hands and careful ratios bring out this Geisha’s elegance — from sparkling acidity to its lingering floral sweetness.

      Pour-Over (V60/Kalita): The best way to experience its clean acidity and floral notes. Use a medium-fine grind and a water temperature around 92-94°C.
      AeroPress: Can produce a sweet cup. Try a shorter steep time (75-90 seconds) to avoid over-extraction.
      Let it Cool: This is crucial. As the coffee cools, the strawberry notes and champagne acidity become much more prominent.
      Use Filtered Water: Soft, filtered water is essential to let the delicate flavours of this Geisha shine.
      Grind Fresh: Grinding right before you brew is non-negotiable for a coffee of this calibre.

      Creative Pairings with Compass

      From refreshing tonics to dessert pairings, these recipes highlight the strawberry brightness and delicate florals of this rare coffee.

      The Pure Pour-Over: This coffee is a masterpiece on its own. Brew it carefully with a pour-over, paying attention to your ratios (1:16 is a good start) and pour speed. Sit back and enjoy the vibrant notes in their purest form. No additions needed.

      Geisha & Tonic: Brew a small, 40ml concentrated shot of the Geisha using an AeroPress and chill it quickly. Pour 150ml of a neutral tonic water over ice in a tall glass and gently float the chilled coffee on top. The botanicals will complement the lilac notes beautifully.

      Dessert Pairing: Serve a cup of this coffee alongside a simple panna cotta or a light berry tart. The coffee’s acidity will cut through the creaminess of the dessert, creating a perfect pairin

      Geisha (or Gesha) is a highly prized and rare variety of Arabica coffee, famous for its exceptionally complex and aromatic flavour profile, often featuring floral and sweet fruit notes.

      What does "Natural" process mean?

      The coffee cherries are dried whole, with the fruit left intact around the bean. This method imparts a distinct fruity sweetness and a heavier body to the coffee.

      Can I use this for espresso?

      Due to its light roast and delicate nature, we don't recommend it for espresso. It is best brewed using filter methods like a pour-over to appreciate its nuances.

      Why is this coffee so expensive?

      Geisha is a low-yielding plant that requires specific conditions to thrive, making it rare. The combination of the varietal, processing, and single-estate origin makes this a truly premium coffee.
